The Dilmah tea bar is an exclusive new concept designed with the support of world renowned tea brand Dilmah from Sri Lanka, serving not only classic afternoon High Tea with a choice of 23 hand-picked fine tea varieties but also a whole new range of amazing tea-based cocktails.

The Rouge Lounge invites guests for pre and post dinner drinks, wines with an extensive wine list numbering over one hundred wines, on display in a freshly created glass cellar and cocktails from a range including exclusive surprises and many specialties. Comfortable sofa chairs and a central pool table allow for new friendships to be made a shared experience to savour.

Located on the waterfront, next to the restaurant and pool, the lounge is a perfect gathering point for guests and a centre point of the Zazen social scene. In the evening the atmosphere is warm and sultry, with red Moroccan lighting and great tunes, creating the ideal setting for sipping cocktails, relaxing after dinner and getting to meet some people around the pool table. Famous on Samui for good reason: very hip, very trendy, very rouge, very Zazen.

The Wine Cellar of Zazen Restaurant is located underground at the entrance of the restaurant. The ceiling of the cellar is made of glass, so that guests can look into the cellar from above. The wine cellar is build out of clay bricks and has about 30cm thick walls to the outside. Two cooling units control the temperature, keeping it at 18 degrees Celsius. Both of the units regularly switch into a de-humidifying mode in order to keep the humidity at 70%. The wine cellar has space for about 900 bottles plus another 200 bottles in the fridges provided for the white wines and rosés. Within the wine cellar we have two old wine barrels for decorative use and to allow us to conduct wine tastings for small audiences. The wine cellar has officially been opened in August 2010. Therefore, the inventory/stock of wines has gradually been increased, due to the considerable initial investment.

When making the wine selection we were keen on providing the broadest range of wines available, covering major regions from 17 different countries in the old and new world, as this did not exist on Samui and very rarely in Thailand in general. In order to accomplish this goal we needed to work with almost all of the many wine suppliers around Thailand (22 in total).

In order to provide the best possible service to our guests, Zazen restaurant has a wide range of equipments available for the appropriate wine service. These assets include a range of decanters for young and old wines, a range of corkscrews, including Ah-so´s for the older wines and of course a wide range of Schott-Wiesel glassware (Bordeaux, Burgundy, Sweet wine and champagne flutes). All the wines offered by the glass are cooled and the oxygen is being removed when closed.

To be able to provide personal assistance to each one of the guests, the F&B Manager who is a “Jung Sommelier” (Achieved in Austria) is present during the dinner service. In addition regular staff trainings are being conducted for the bar and waiting staff. These trainings include grape knowledge, wine and food pairing and vinification methods so that each one of the staff can give basic assistance to the guests. Local and international producers are also regularly welcomed to provide insights into their wines for guests and staff alike.
